Questions
What is the difference between koobideh, barg and chenjeh?
Koobideh is seasoned ground meat pressed onto the skewer. Barg is a single flattened cut of tenderloin. Chenjeh is chunks of the same, marinated and grilled.
Is there anything for vegetarians?
Yes — ash reshteh, mirza ghasemi, kashk-e bademjan, and the black-eyed peas and rice, which is vegan.
