A stone oven and a charcoal grill

Turkish street food, cooked the way it is cooked on the street. Pide comes out of the stone oven in its long boat shape. Adana and Antep are knife-minced and grilled over charcoal. Mezze to start, and a rice pudding baked until the top browns.

What is pide?

Turkish flatbread baked in a long boat shape with the filling laid along it — cheese, spinach, roasted beef, or ground beef folded over in the Black Sea style.

What is the difference between Adana and Antep?

Both are knife-minced lamb grilled over charcoal. Adana is the spicy one, named for the city in the south; Antep is mild.
